Refreshing coffee cocktails aren’t the only way to beat summer temperatures. So let’s take advantage of the heat wave to whip up an ultra-delicious and super-thirst-quenching watermelon salad. Watermelon, cantaloupe, peach, strawberry, raspberry, zucchini, tomato, beetroot, cucumber, basil, mint, capers, croutons, crushed walnuts, pomegranate seeds, feta, goat cheese, ricotta… anything goes! As for seasoning, add a few splashes of olive oil and vinegar. We also think of Tabasco, smoked paprika and chilli to give it a kick. In terms of service, there are different options available. We choose to serve our sunny recipes in a large salad, on a plate or in individual bowls.

Greek watermelon salad

Ingredients for the salad:

  • 1 cucumber
  • 1/4 watermelon
  • basil leaves
  • 1/2 red onion
  • 20 g of diced Feta
  • 1 handful of pitted black olives
  • the zest of a lemon
  • a few mint leaves (for garnish)
  • olive oil

Ingredients for the vinaigrette:

  • the juice of a lemon
  • 10 ml of olive oil
  • 1 pinch of salt


Prepare the vinaigrette by mixing the salt, lemon juice and oil. Dice the watermelon, cucumber and cheese, then place in a large salad bowl. Drizzle with lemon juice and garnish with fresh basil, finely chopped onion and black olive slices. To serve. As a variation, you can put the ingredients on skewers and enjoy them that way.

  • 1/2 watermelon
  • 1 melon
  • prosciutto
  • 2 cups baby mozzarella balls
  • pine nuts
  • 2 fresh onions
  • 1 grain of garlic
  • 10 basil leaves
  • 10 mint leaves
  • 80 g of parmesan or pecorino
  • 1 organic lime
  • olive oil
  • cider vinegar
  • liquid honey


Chop the flesh of the fruit. Peel and chop the garlic and onions. Grate the lemon zest and squeeze the fruit. Wash, dry and chop the mint and basil. Gently mix all these ingredients, drizzle with olive oil, a few glasses of cider vinegar, lemon juice and a few drops of honey. Salt and pepper in the mill. Sprinkle with mint and basil leaves. Add the parmesan, mozzarella, prosciutto and pine nuts. Keep cool until ready to serve.

Watermelon, arugula and shrimp salad

  • 600 g peeled prawns
  • ½ watermelon, sliced
  • 1 handful of blueberries
  • 120 g of feta
  • 1 half avocado
  • 240 g of arugula
  • 1 cup balsamic vinegar
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon Garlic powder
  • salt and pepper


Submerge the shrimp in a bowl full of water. In a small saucepan, pour some balsamic vinegar and bring to a boil. Lower the heat and simmer for 5 minutes, until it has the consistency of syrup. Remove from heat and set aside. Season the shrimp with olive oil, salt and pepper. Then thread them with the watermelon slices onto bamboo skewers and grill for 2 minutes on each side. To assemble the salad, first lay out the arugula leaves, add the watermelon slices, the grilled shrimp and finish with a handful of blueberries and feta. Decorate with a few drops of balsamic reduction.

Watermelon, tomato and strawberry salad

  • 2 tablespoons balsamic vinegar
  • 1 C. spoonful of fresh lemon juice
  • ½ cup of olive oil
  • 2 or more cherry tomatoes
  • 1 cucumber
  • mint leaves
  • basil leaves
  • 5 strawberries, cut into small pieces
  • 1-2 teaspoons of sugar
  • 200 g of diced watermelon
  • pistachios
  • 1 burrata
  • pepper and salt

In a small bowl, whisk together the vinegar, lemon juice, and olive oil. Cut the tomatoes and cucumber into slices and put them on a plate. Season them with salt, pepper, sugar and then pour half of the vinaigrette. Add the burrata, pistachios, mint and basil leaves, strawberry slices, tomatoes and watermelon cubes. Garnish with remaining dressing and serve.

Grilled Watermelon and Halloumi Summer Salad

Rich in water and especially soothing, watermelon is the star fruit of the summer season… and of certain diets to lose weight. Usually eaten as a dessert, its juicy juice, full of virtues for health and beauty, works wonders when cooked.


  • 1 large slice of watermelon
  • 1 handful of blueberries
