Our green bean and fresh goat cheese meatball salad recipe

July to September is peak season for green beans. These vegetables are not only delicious – especially when you buy them fresh – they are also low in calories (32 calories per 100 g), very rich in fiber, vitamin B9 (also called folic acid) and potassium. In our recipe, its fresh flavor combines perfectly with the lactic acidity of the goat cheese and the sweetness of the raspberry.

The ingredients for 4 people

250 g of fresh goat cheese

350 g of green beans

125 g of raspberries

1 handful of raisins

1 C. to the s. dried cranberries

1 C. to the s. gables

1 C. to the s. almonds

1 C. to the s. za’atar (Lebanese spice mix)

1 C. to the s. sesame seeds

2 sprigs of basil

2 tablespoons to the. olive oil

salt and pepper

For the sauce:

1 lemon

10 c. to the. olive oil

2 tablespoons to the. liquid cream

salt and pepper

The steps of the recipe

1. Beans

Cut the green beans, rinse and steam for 8 to 10 minutes.

2. Meatballs

Mash the blueberries, almonds and pine nuts with a knife, add the za’atar, sesame seeds, salt and pepper.

Take a small spoonful of goat cheese, roll it between the palms of your hands, brush it with olive oil and roll it through the minced meat, then put it on a plate and continue with the rest of ingredients

3. Sauce

Squeeze the lemon, add the oil, cream, salt and pepper. Mix up.

Pour in the green beans, mix with the raisins and raspberries.

Add the goat meatballs and serve with chopped basil.
